Triplicate Measurement of Mike's Hot Sauce

martinpeacock13

In this video we prepared and measured Mike's Hot Sauce in triplicate.

Question One - In the video, you are using a 1 in 5 dilution—would you say this is more accurate? Answer - The hot honey is very mild so it does not require a lot of dilution as the capsaicin is not at high concentrations, so we get a more accurate result now we have introduced a 1 in 5 dilution option.

Question Two - I am not using a centrifuge device—would this help with accuracy, and is it necessary for accurate results? Answer - The vortexer used in the video is an ONiLAB MX-S, this is available on Amazon.

Question Three - Can you send me a photo of how much liquid you are dropping on the sensor to get the reading? I was placing 50 microliters on the sensor, but in your video, it looks like you are using less—am I doing this correctly? Answer - We are definitely also using a 50 microlitre drop.

Question Four - When testing raw ingredients like peppers, would you suggest using a 1 in 5 ratio or a 1 in 10 ratio? Answer - It is much more 'common' to use a 1 in 10 ratio, we are only using 1 in 5 with 'Hot Honey' because they are very mild.
